2019

Winemaking

The Tantalus Sauvignon Blanc represents the best of Marlborough. Sourced entirely from the renowned Awatere Valley, ensuring vibrance and complexity in every sip. 20% of the wine was barrel fermented and underwent regular lees stirring which imparts a luxurious mouthfeel and a great depth of interest. The remainder was fermented in stainless steel to preserve varietal freshness.

2020

Price: $30 per bottle

Winemaking

Carefully pressed with precise skin contact time and extracting about 650L/t, no adjustments of acid or sugar had to be made to the juice that was fermented with its natural solids with a prise de mousse special yeast. Following a slow and cool ferment at 12C in stainless steel with brilliant aroma development, the wine was racked minimizing the air contact, fined, filtered and bottled with minimal sulfur to preserve the freshness and aromatic longevity.

Spanish garlic king prawns, Deep-fried sesame chilli salted squid, Pork chilli coconut and gapi salad with roasted shallots, Raspberry and goat cheese salad , Thai green chicken curry.

Vintage report

A mild spring allowed the vines to escape frost free, while good ground moisture led to an early flowering. The last significant rain was on the 18th of December with only 21mm between then and the end of harvest, the lowest total rainfall on record for this period for 79 years!. Temperatures in January and February were more moderate than 2019, which alleviated some of the effects of drought. The dry weather and above average Growing Degree Days lead to clean, perfectly ripe fruit.

2021

Winemaking

Whole bunch pressed and cold settled, then racked in equal portions to a small stainless steel tank and French oak barrels of second and third use for gentle extraction. Innoculated with a selected single yeast strain for a slow, cold, malo-ethanolic fermentation to retain freshness and varietal expression while reducing acidity for a balanced structure. The barrel portion regularly underwent bâttonage which has added great mouthfeel and complexity to the blend.

Food pairing:

New Zealand green-lipped mussels with garlic butter, roasted asparagus salad with lemon and feta, confit Jerusalem artichokes with citrus crème fraîche, herbed goat cheese on crostini, Thai green curry.

Vintage report

Late spring frosts and some challenging weather over flowering resulted in reduced crop levels across the region. These moderate crops combined with warm settled weather throughout the mid to later stages of the growing season provided perfect conditions to deliver pristine fruit, and earlier than we have ever experienced. The clear, warm days continued right through March enabling us to pick small parcels of perfectly ripe fruit at our leisure without any pressure from the elements.

2024

Inoculated with a selected single yeast strain for a slow cold fermentation to retain freshness and varietal expression. The barrel portion regularly underwent battonage which has added great mouthfeel and complexity to the blend.

Veal chops with braised kale, lemon and olive oil, Scallop carpaccio with spring onions, Hapuku and citrus tartare, White wine chicken and portobello sauce, Goat’s cheese and watercress quiche.

Vintage report

Mother Nature smiled upon Marlborough this year, bestowing us with one of the smallest and most serene vintages in recent memory. With sunny, settled conditions, we could abandon the usual obsessive weather-watching and allow the grapes to ripen leisurely on the vines, reaching their peak flavor naturally. The season began with low winter rainfall and cooler temperatures during flowering, resulting in a significantly reduced fruit set. Sauvignon blanc yields were down by 20-30% across the region. Summer saw warm, windy El Nino conditions persist, with only 161mm of rainfall from September to March, making it the driest season in 94 years. Despite the low yields, the pristine fruit has produced wines of exceptional quality, boasting beautifully ripe flavors of great intensity. We are incredibly excited about the caliber of this vintage and have no doubt that 2024 will be remembered as one of Marlborough’s finest.
